Sunomono Cucumber Salad

This is a raw version of Sunomono! Serve with raw sushi or as a snack.

Time to create: 10 minutes
Time to chill: 2 hours



  • 1 Cucumber
  • 2 Tbsp Apple cider vinegar
  • 1/2 tsp. Stevia or juice of half an Apple
  • 1/2 tsp. Sea salt
  • 1/4 tsp. Nama Shoyu
  1. To make the dressing mix the Apple cider vinegar, Stevia or juice, Salt and Nama Shoyu.
  2. Slice the Cucumber into small pieces and pour the dressing over them in container.
  3. Refrigerate for 2 hours to let the flavors soak in.

Makes 2 servings.
